Chase the Bag
With a plastic bag at the end of a stick, or any other target, we can teach the horse to chase the target, first at a walk, and later as fast as the rider can run.

Just like a dog, a horse can learn to go after things thrown for him, and fetch them back to the rider in return for a treat.
